Il grano, una coltivazione tra le più antiche e cariche di simbologie, predilige le zone calde dove può essere coltivato anche con scarse precipitazioni atmosferiche. Nel Molise ancora oggi l'agricoltura, pur con le trasformazioni tecnologiche, ha mantenuto intatto il forte collegamento che esiste tra l'uomo e la natura, una sintonia che si rinnova nell'arte molitoria, tanto radicata nella nostra regione, ed è proprio qui che si avvia la tradizione pastaia Guacci.
